Shelter Small Batch Blue Corn Bourbon is not your typical Bourbon; it's a celebration of the American West. We use Non-GMO Heirloom Blue Corn, which is cultivated for its flavor, not cattle feed. Masterfully blended from 2-3 hand-selected barrels, our Small Batch Bourbon imparts signature flavors of Birthday Cake, Vanilla, and Maple.

• Grain Bill: California Blue Corn 70%, Colorado White Wheat 20%
• Colorado 2 Row Malted Barley 5%, and Colorado Rye Malt 5%
• Yeast: Safspirit USW-6
• Water: Eastern Sierra Alpine Snowmelt
• Fermentation: Temperature-controlled fermentation in an open-top, flat-bottom cylindrical stainless mixer tank with some lactic acid production
• Distillation: Double Pot Still distillation
• Wood: Slow proofed to 100, then barreled into char 4 American Oak barrels
• Bottle: Non-Chill Filtered. 3-4 barrels selected for flavor, slow proofed to 90, then filtered warm through coarsely woven cloth into the bottle
